11. Meal Prep Mediterranean Bowls

Greek Bowls

Easy, high protein, bursting w/ flavor.

These greek bowls are a staple in my college kitchen. Not only are they packed with flavor, but they are PERFECT for leftovers…honestly chopping up the tomatoes and cucumber and letting them sit for a while in the fridge makes it that much better. It is one of those “better the second time” type of meals. Also, this meal is NOT the same without the Ithaca lemon dill hummus!! This stuff is next level (trust).

Details:

Base: 

  • arugula

  • quinoa cooked in bone broth for extra flavor or Mediterranean Right Rice

Greek Meatballs: 

  • 1 lb ground chicken 

  • chopped dill 

  • 1 tsp cumin, salt and pepper to taste, garlic salt

  • 1 egg

  • 1 TBSP almond flower

  • Combine all ingredients and air-fry on 350 degrees for 10-12 minutes or in oven for 15

Toppings: 

  • chopped tomatoes, cucumbers, and garbanzos in salt, pepper, lemon juice and EVOO (pro-tip: create the morning of and let sit)

  • Ithaca Lemon Dill Hummus
