50. The Best Fall Salad

I had Friendsgiving last night and for my dish, I decided to create my own take of my favorite Sweetgreen Harvest Bowl. It was by far a fan favorite!


Ingredients:

Salad:

  • 1 bad of chopped kale

  • 1 medium/large sweet potato

  • 1 carton of goat cheese

  • 1/2 cup roasted and salted pistachios

  • 1 honey crisp apple

  • rosemary

  • salt/pepper

Dressing:

  • 1/2 cup EVOO

  • 1/2 cup apple cider vinegar

  • 2 TBSP dijon

  • 1 TBSP maple syrup

  • 1/2 TBSP minced garlic

  • 1 TSP salt

  • 1 TSP pepper

Details:

  1. skin and cube sweet potatoe

  2. cover in EVOO, salt, pepper, and rosemary

  3. put in air fryer/oven on 400 for 20 minutes

  4. while potatoes are cooking, add kale to a bowl and make sure to remove all of the stems

  5. coat kale with a little bit of EVOO and massage until soft

  6. cube honey crisp apple and then add apples, pistachios, sweet potatoes and goat cheese to salad

  7. for the dressing: add all ingredients into blender and blend until mixed

  8. add dressing and mix!
