50. The Best Fall Salad
I had Friendsgiving last night and for my dish, I decided to create my own take of my favorite Sweetgreen Harvest Bowl. It was by far a fan favorite!
Ingredients:
Salad:
1 bad of chopped kale
1 medium/large sweet potato
1 carton of goat cheese
1/2 cup roasted and salted pistachios
1 honey crisp apple
rosemary
salt/pepper
Dressing:
1/2 cup EVOO
1/2 cup apple cider vinegar
2 TBSP dijon
1 TBSP maple syrup
1/2 TBSP minced garlic
1 TSP salt
1 TSP pepper
Details:
skin and cube sweet potatoe
cover in EVOO, salt, pepper, and rosemary
put in air fryer/oven on 400 for 20 minutes
while potatoes are cooking, add kale to a bowl and make sure to remove all of the stems
coat kale with a little bit of EVOO and massage until soft
cube honey crisp apple and then add apples, pistachios, sweet potatoes and goat cheese to salad
for the dressing: add all ingredients into blender and blend until mixed
add dressing and mix!
