Romesco Pesto Sheet-pan Chicken

Oh the love I have for a sheet pan meal and a good sauce :)

Oh the power of a sheet pan dinner! This concept has completely changed my approach to making dinners. It is a way to meal prep, make so many assortments of meals, and save SO much time. I also just purchase the Our Place Wonder Oven and it makes cooking sheet-pan dinners even easier!

This meal was inspired by Sanne Violet’s high protein meal series. However I made my own rendition of the sauce by adding in Trader Joe’s vegan pesto. This pesto is such a good staple to have on hand to up-level dishes and is made with such clean ingredients. Adding the pesto to the red pepper sauce added such a good flavor mix-up and paired so well with the spices on the chicken and broccolini. This spice combo is 100% becoming a staple chicken marinade for me.

Ingredients:

(Makes 2 servings) - great for leftovers and meal prep

Main-Course:

  • 2 Chicken Breast

  • Broccolini

  • Seasonings: garlic powder, chilli powder, paprika, salt, & pepper

  • EVOO

Sauce:

How To:

  1. Coat chicken in EVOO and seasoning on each side. I eye balled each with only a sprinkle of chili powder (very spicy!)

  2. Place Chicken in oven on 375 degrees for 15 minutes

  3. cover broccolini in EVOO salt and pepper

  4. Once the 15 minutes has passed, flip the chicken breasts and add the broccolini on the pan. Place back in oven for 15 more minutes.

  5. For the sauce: put all of the ingredients into a blender and blend until desired consistency. Place in fridge.

  6. Once the chicken is no longer pink and the broccolini is cooked to your liking, plate the dish & enjoy!
