44. Homemade Protein Granola

This is truly the BEST granola and is packed with extra protein to help level out the typical blood sugar spike that comes with granola. Add it on top of greek yogurt (my favorite here), have in hand-fulls on its own, or enjoy any way you like!!

Ingredients:

  • 1 cup rolled oats

  • 1/2 cup pumpkin seeds

  • 1/2 cup chopped walnuts

  • 1/2 cup coconut shreds

  • 2 TBSP hemp seeds (adds more protein!)

  • 1 scoop vanilla protein powder (I use Truvani)

  • 1/3 cup melted coconut oil

  • 2 TBSP maple syrup (can ad more for sweeter)

  • 1 TBSP cinnamon

  • 1 tsp sea salt

Details:

  1. Add all of the dry ingredients to a bowl except for the coconut shreds and mix.

  2. Add in maple syrup and coconut oil and mix again.

  3. Spread out on a baking sheet and put in the oven at 350F for 8-10 minutes.

  4. Pull out and add the coconut flakes to the pan and give the mixture a toss.

  5. Put back in the oven for 7-8 minutes.

  6. Let cool and ENJOY on yogurt bowls, by the handful, however!
